Global demand for plant-based foods has been rising at a rapid pace. According to the Bloomberg Intelligence Report, plant-based food sales are expected to increase fivefold by 2030. This has created a substantially increased need for vegan foods worldwide. Consequently, new food trends are gaining popularity and are shaping and leading innovation in the food industry. The market has therefore opened for new requirements, inclusive of flavours.
Locally, vegan popularity has also taken roots. Google Trends data, compiled in 2019, revealed that South Africa is 23rd worldwide for veganism popularity and first in Africa!
It is however apparent, that although consumers have definite ideas of what they are willing to eat and where it must come from, they are not willing to sacrifice taste. When food manufacturers therefore look at the target audience that embraces a different dietary lifestyle from the current masses, the taste of vegan products plays a vital role.
“Creating a memorable vegan taste experience requires a delicate balance between appearance, texture, flavour and mouthfeel. This is created through the perfect composition and the processes used to generate its structure. Ingredient functionality is therefore key for manufacturers who want to propel market growth,” says Elaine Grobbelaar, Director at Flavour Sensations.
Consumer demand is the driving force behind the development of vegan flavours and colours. Manufacturers must stay abreast of food trends and the market by continuing to innovate, and to focus on upgrading and modifying products to supply the demand for new formulations from the food and beverage industry.
The selection of flavours has inevitably become central in the ingredient matrix of this challenging environment, especially considering this conscientious consumer. The base used, as well as the product category, will influence the selection of flavour. It is therefore imperative to collaborate and partner with knowledgeable and innovative flavour experts. As with any product development, its success lies in achieving the optimal ingredient balance.
